Avocado and Papaya Gazpacho
Ingredients:
- 1 cup firm, ripe papaya, finely chopped
- 1 cup firm, ripe avocado, finely chopped
- 1/3 cup sweet green pepper, finely chopped
- 2/3 cup firm, ripe tomatoes
- 1/4 cup sweet onion, finely chopped
- 3 cups best quality tomato juice
- 3 cups best quality pineapple juice
- 1/2 cup cilantro, finely chopped
- 1 tsp fresh lime or lemon juice
- 1 tsp Busha Browne Pukka Hot Pepper Sauce
- Salt and freshly ground pepper taste
Instructions:
Combine all the finely chopped ingredients in a glass bowl and chill for several hours. Serve icy cold in pre-chilled earthenware bowls garnished with a few freshly ground papaya seeds, a sprig of cilantro or young celery tops.
