Corn Fritters with Spicy Mayo
INGREDIENTS
- 4 ears corn, kernels stripped
- 1/2 red onion, minced
- 2 cloves Catch a Fire Cajun Garlic, minced
- 1 tsp. Cayenne Hot Pepper Sea Salt
- 2 large eggs, beaten
- 1/4 c. all-purpose flour, plus more if necessary
- Black pepper
- 1 tbsp. Extravagonzo Roasted Garlic Culinary Oil
- 3 tbsp. mayonnaise
- 2 tsp. Charlie’s Hard Times Hot Sauce
DIRECTIONS
- In a large bowl, combine corn, onion, Catch a Fire Cajun Garlic, and Cayenne Hot Pepper Sea Salt and stir together well. Add beaten eggs and stir, then add flour. Season with pepper.
- In a large skillet over medium-high heat, heat Extravagonzo Roasted Garlic Culinary Oil. Using your hands, form corn mixture into small patties. (If mixture feels too thin, add more flour, one tablespoon at a time.) Cook fritters until crisp and golden, about 2 minutes, then flip and cook 2 minutes more. Transfer to a paper towel-lined plate to cool.
- In a small bowl, stir together mayo and Charlie’s Hard Times Hot Sauce. Serve fritters with spicy mayo.
