Potatoes Au Gratin With A Creamy Jalapeño Sauce
Ingredients:
Jalapeno Sauce:
- 1 Large onion (or 2 small ones), sliced
- 2 Tablespoons of butter or margarine
- 2 Texas Sweet & Hot Jalapenos
- 1 Ts. of Texas Sweet & Hot Jalapenos Juice (from the jar)
- Salt + Pepper
- 2 Cups of Whipping Cream
For Gratin:
- 2 Big Baking Potatoes (or 3 medium ones)
- 1½ cups of shredded cheese (you can use a blend or mozzarella)
- 2 Tablespoons of grated Parmesan Cheese
- Salt + Pepper
Instructions:
- Preheat Oven to 350 Degrees Fahrenheit
For Jalapeño Sauce
- In a big skillet, melt the butter or margarine over medium heat
- Toss in the onions and cook until they soften
- Add the jalapeño slices and the jalapeño juice. Cook for 1-2 minutes
- Pour in the whipping cream and let it simmer over low heat for 5 minutes
For Gratin
- Peel potatoes and slice into thin slices
- Arrange them in a scalloped shape, one potato slice overlapping the other in a medium casserole pan
- Season with salt and pepper
- Add ⅓ of the Jalapeño Sauce and top with ½ cup of the cheese
- Repeat the same pattern for 2 more layers
- Grate parmesan cheese on top
- Cover with foil
- Bake in the oven for 45 minutes to 1 hour 15 minutes or until fork tender
- Uncover
- Broil for 1-2 minutes or until the top is brown and bubbly
- Let it cool 10 minutes before cutting
