Fruit Glazed Carrots
Ingredients:
- 1.b Baby Carrots
- 2 Tbsp. Butter
- 3 Tbsp. Jalapeno Honey
- 2 Tbsp. Jalapeno Peach Preserves
- 1/4 shelled pumpkin seeds
- Salt & Pepper to Taste
Instructions:
In a medium saucepan, fill 3/4 full with water and bring to a boil. Add salt then carrots and cook until tender (5-6 minutes). Drain the carrots and return to pan. Add butter, honey and preserves. Cook until a glaze coats the carrots (about 5 minutes). Season with salt and pepper and garnish with pumpkin seeds.
