Bacon, Egg, & Asparagus
Ingredients:
- 2 eggs
- 4 slices bacon, cooked
- 1 ciabatta roll, cut in half lengthwise
- 2 tablespoons butter or olive oil
- 6 asparagus spears, baked or steamed
- ½ cup E&V Red Bell Pepper Ancho Chili Jam
Instructions:
With a biscuit cutter, cut a hole out of center of both sides of bread. Heat butter or olive oil in a skillet over medium heat, place bread slices in a large skillet and crack eggs in each bread hole. Cook eggs to desired doneness, plate with bacon, asparagus and E&V Red Bell Pepper Ancho Chili Jam. Serves 2
