Bean Salad

Ingredients:

  • 1 tablespoon E&V Chipotle Honey Lime Mustard
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon crushed garlic
  • 15 ounce can garbanzo beans, drained and rinsed
  • 1 avocado
  • 1/2 red bell pepper
  • 4 strips bacon (about 4 oz), cooked and chopped
  • 1/4 cup chopped red onion
  • Salt and pepper to taste

Instructions:

Whisk together E&V Chipotle Honey Lime Mustard, olive oil, vinegar and garlic. In a medium sized bowl toss garbanzo beans, avocado, bell pepper, bacon and onion with dressing, salt and pepper to taste. Serves 4
