Chopped Papaya Chicken Salad
Ingredients:
Dressing:
- 1/2 cup E&V Papaya Chipotle Pineapple Marinade & Dressing
- 1/4 cup olive oil
- 1 tablespoon minced cilantro
- 1/2 teaspoon salt
- 1 garlic clove, crushed or minced
- 1/2 tablespoon Dijon mustard
- Fresh cracked pepper
Salad:
- 1 head Romaine lettuce
- 1 cup cherry tomatoes, chopped
- 2 avocados, chopped
- 1/2 red onion, chopped
- 1 medium papaya, peeled, seeded and chopped
- 6 ounces queso fresco, chopped
- 1 cup precooked chicken, chopped
Instructions:
In a small bowl whisk together dressing ingredients. Place salad ingredients in a large bowl and toss with dressing. Serve immediately. Serve 6 to 8
