Chicken Burrito with Chipotle Cream

Ingredients:

  • 2 large chicken breasts
  • 1 cup uncooked rice, white or brown
  • 1 15 ounce can black beans, or home made
  • 1 avocado, sliced
  • 12 cherry tomatoes, cut into quarters
  • 1 cup shredded cheese, Monterey or cheddar
  • 4 to 6 large burrito size tortillas
  • 1 cup sour cream
  • 3 tablespoons E&V Chipotle Honey Lime Mustard

Instructions:

Grill chicken breast and slice. Cook rice according to package directions. Mix together sour cream and E&V Chipotle Honey Lime Mustard in a small bowl. Heat flour tortillas and serve family style so everyone can build their own burrito. Serve extra chipotle cream on the side.

Serves 4 to 6 depending on burrito size.
