Veggie Fajitas

Ingredients
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 small zucchini, cut into 2 inch strips
  • 1 cup sliced fresh mushrooms (crimini mushrooms are quite nutritious)
  • 1 onion, sliced
  • 1 tablespoon Extravagonzo Roasted Garlic or Red Chili Oil
  • ½ teaspoon curry powder
  • ½ teaspoon chili powder
  • ¼ teaspoon cumin
  • 4 flour tortillas

Instructions
  1. Saute the peppers, mushrooms, and onion in Extravagonzo Roasted Garlic or Red Chili Oil for 3 to 5 minutes.
  2. Add the spices and continue cooking for another 2 minutes, or until veggies are tender.
  3. Place a few spoonfuls of the mixture in a flour tortilla
  4. Top with sour cream and Green Lava
  5. Enjoy
