Veggie Fajitas
Ingredients
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1 small zucchini, cut into 2 inch strips
- 1 cup sliced fresh mushrooms (crimini mushrooms are quite nutritious)
- 1 onion, sliced
- 1 tablespoon Extravagonzo Roasted Garlic or Red Chili Oil
- ½ teaspoon curry powder
- ½ teaspoon chili powder
- ¼ teaspoon cumin
- 4 flour tortillas
Optional
- Sour cream
- Catch a Fire: Green Lava
Instructions
- Saute the peppers, mushrooms, and onion in Extravagonzo Roasted Garlic or Red Chili Oil for 3 to 5 minutes.
- Add the spices and continue cooking for another 2 minutes, or until veggies are tender.
- Place a few spoonfuls of the mixture in a flour tortilla
- Top with sour cream and Green Lava
- Enjoy
