Healthy Baked Chicken Nuggets
Ingredients
- 2 large skinless, boneless chicken breasts, cut into even bite-sized pieces
- 2 teaspoons Extravagonzo Culinary Oil (Garlic or Red Chile)
- 6 tablespoons whole wheat Italian seasoned breadcrumbs
- 2 tablespoons panko
- 2 tablespoons grated parmesan cheese
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Preheat oven to 425°.
- Place oil on an aluminum-foil lined baking sheet.
- Place chicken bites on baking sheet and roll in Extravagonzo Culinary Oil (Garlic or Red Chile) until covered.
- Mix breadcrumbs, panko, parmesan cheese, salt and pepper on a plate.
- Place chicken bites on plate and toss until completely covered
- Place covered chicken bites back on baking sheet. Lightly spray the top with Extravagonzo Culinary Oil (Garlic or Red Chile) spray then bake 8-10 minutes. Turn over then cook another 4-5 minutes or until cooked through.
- Serve immediately or cool and freeze in an airtight bag or container.
