Healthy Baked Chicken Nuggets

Ingredients
  • 2 large skinless, boneless chicken breasts, cut into even bite-sized pieces
  • 2 teaspoons Extravagonzo Culinary Oil (Garlic or Red Chile)
  • 6 tablespoons whole wheat Italian seasoned breadcrumbs
  • 2 tablespoons panko
  • 2 tablespoons grated parmesan cheese
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
Instructions
  1. Preheat oven to 425°.
  2. Place oil on an aluminum-foil lined baking sheet.
  3. Place chicken bites on baking sheet and roll in Extravagonzo Culinary Oil (Garlic or Red Chile) until covered.
  4. Mix breadcrumbs, panko, parmesan cheese, salt and pepper on a plate.
  5. Place chicken bites on plate and toss until completely covered
  6. Place covered chicken bites back on baking sheet. Lightly spray the top with Extravagonzo Culinary Oil (Garlic or Red Chile) spray then bake 8-10 minutes. Turn over then cook another 4-5 minutes or until cooked through.
  7. Serve immediately or cool and freeze in an airtight bag or container.
