Rock Cod

Ingredients:
Directions:
  1. Choose a lidded pan large enough to sauté the filets; I cut my fillets in half to fit into my #8 size cast iron pan like jigsaw puzzle pieces.
  2. Heat the pan to low to medium sauté temp
  3. Add Extravagonzo Roasted Garlic Culinary Oil and EVOO
  4. Bring back to temp for 20 or 30 seconds
  5. Lay fillets in oil (“skin” side down – no skin, but the side that HAD the skin on it)
  6. Season with sea salt and fresh ground black pepper to taste
  7. Cover with lid
  8. Let fish cook until done through, maybe 8 to 12 minutes (opaque white with edges curling up from bottom of pan). Try not to overcook!
  9. Keep an eye on them – when they curl and easily flake with a fork pull ’em off the heat and onto a plate
  10. Squeeze some lemon juice if you like
  11. Done!
