Balsamic Roasted Delicata Squash

Ingredients:
  • 1½ lbs. delicata squash (Winter Squash), split, seeded, cut in ½ inch slices
  • 1 medium sweet onion (about 6 oz.), cut in ½ inch slices
  • 2 tablespoons Extravagonzo Roasted garlic Culinary Oil
  • 2 tablespoons Dark Balsamic Vinegar
  • Salt & Pepper to taste (sea salt, fresh ground pepper)
Directions:
  1. Preheat oven to 450 degrees
  2. Combine squash, onion, Extravagonzo Roasted garlic Culinary Oil, and Balsamic in medium bowl, toss to coat
  3. Arrange in single layer on baking sheet
  4. Roast 25-30 minutes turning halfway through, until browned and tender
  5. Season to taste with sea salt & pepper
