Grilled Sweet Chili Salmon
Ingredients:
- 4 (6 oz.) Salmon fillets
- Olive oil, salt and pepper to season
- 1 package Bean thread noodles (approx. 7 oz.)
- 2 cups Carrots, matchstick or large shred
- 1 cup Scallions, thinly sliced
- 1 bottle Robert Rothschild Farm Thai Sweet Chili Sauce
Instructions:
Preheat grill. Pat the salmon fillets dry and rub with olive oil and then season with salt and pepper. Grill 4 – 5 minutes on each side or until fish flakes easily. Let rest, covered with foil. Soak bean threads in boiling water for 10 minutes. Drain, rinse with cold water to cool completely and drain very well again. While the noodles are cooking, prepare the carrots and scallions. Combine the noodles and vegetables with half the Thai Sweet Chili Sauce. Divide the rice between four plates. Place a salmon fillet atop each and drizzle with remaining sauce. Serve immediately.
