Asian Peanut Chicken
For Chicken:
- 2 Tbsp. Oil
- 2 Chicken breasts, boneless
- Salt and pepper
For Sauce:
- 1 tsp. Oil
- 1 Tbsp. Jalapeno, finely minced
- 2 Tbsp. Asian Marinade
- 1/4 cup Soy sauce (Psycho Soy, if you dare)
- 1/4 cup Chicken stock
- 1 Tbsp. Fish sauce
- 2 Tbsp. Lime juice
- 2 tsp. Sugar
- 1/2 cup Hot and Spicy Peanut butter
To Finish:
- 1 lb. Soba noodles, or other Asian noodles
- Green onions, diced
- Snow peas, blanched
- Broccoli, steamed
Chicken:
Heat oil in frying pan. Cut chicken into small strips or pieces and season with salt and pepper. Cook chicken completely in frying pan and remove.
Sauce:
Heat oil in saucepan. Add jalapeno and cook for 1 minute. Add Asian Marinade, soy sauce, chicken stock, fish sauce, lime juice and sugar, bring to boil. Reduce to simmer and whisk in Hot & Spicy peanut butter to form a gook emulsion.
Finish:
Add sauce and chicken to noodles and mix well. Top with green onions. Favorite vegetables such as snow peas or broccoli add nice touch to this dish. Serve warm or cold.
