Bacon, Egg, & Asparagus

Ingredients:

  • 2 eggs
  • 4 slices bacon, cooked
  • 1 ciabatta roll, cut in half lengthwise
  • 2 tablespoons butter or olive oil
  • 6 asparagus spears, baked or steamed
  • ½ cup E&V Red Bell Pepper Ancho Chili Jam

Instructions:

With a biscuit cutter, cut a hole out of center of both sides of bread. Heat butter or olive oil in a skillet over medium heat, place bread slices in a large skillet and crack eggs in each bread hole. Cook eggs to desired doneness, plate with bacon, asparagus and E&V Red Bell Pepper Ancho Chili Jam. Serves 2
