Balsamic Roasted Delicata Squash
Ingredients:
- 1½ lbs. delicata squash (Winter Squash), split, seeded, cut in ½ inch slices
- 1 medium sweet onion (about 6 oz.), cut in ½ inch slices
- 2 tablespoons Extravagonzo Roasted garlic Culinary Oil
- 2 tablespoons Dark Balsamic Vinegar
- Salt & Pepper to taste (sea salt, fresh ground pepper)
Directions:
- Preheat oven to 450 degrees
- Combine squash, onion, Extravagonzo Roasted garlic Culinary Oil, and Balsamic in medium bowl, toss to coat
- Arrange in single layer on baking sheet
- Roast 25-30 minutes turning halfway through, until browned and tender
- Season to taste with sea salt & pepper
