Chicken Tacos with Chipotle & Corn Salsa
Ingredients:
- 4 boneless, skinless chicken breasts (frozen ok)
- 2 cups (16 ounces) *Fischer & Wieser Chipotle & Corn Salsa
- 1 package taco seasoning mix (Try Palo Alto Firefighters Sauce– No Sodium!!!)
Instructions:
Place boneless, skinless chicken breasts in slow cooker (use liner if desired). Mix Fischer & Wieser Chipotle & Corn Salsa and taco seasoning mix together, stirring briskly with fork until seasoning is dissolved. Pour over chicken. Turn slow cooker on low and cook 6-8 hours, or on high and cook 3-6 hours. When done, remove chicken from slow cooker and shred with fork on a flat surface. Won’t take much effort, as the chicken will probably fall all to pieces when you take it out of the slow cooker.
Serve with corn or flour tortillas, shredded lettuce, chopped onions, tomatoes, chopped cilantro, shredded cheddar or Monterey Jack cheese, guacamole, sour cream, pico de gallo, and more Fischer & Wieser Chipotle & Corn Salsa. Serves 6-8
