Chipotle Mushrooms

Serving size 6

Ingredients:

  • 4 tablespoons Extravagonzo Red Chili Culinary Oil
  • 1 medium onion, finely diced
  • 4 Catch a Fire Cajun Garlic cloves, finely minced
  • 4 cups button mushrooms, woody stem removed
  • 2 chipotle chilies in adobo sauce, finely chopped with 1 tablespoon of sauce
  • Pinch of kosher salt
  • 1/4 cup fresh cilantro, chopped

Directions: 

  1. In a large skillet, heat the Extravagonzo Red Chili Culinary Oil over medium heat. Add the onions and cook for 3 minutes.
  2. Add the mushrooms, Catch a Fire Cajun Garlic and chipotles. Stir to coat.
  3. Season with the salt, and continue to cook while stirring occasionally for approximately 7 minutes or until mushrooms have reached the desired tenderness.
  4. Remove from heat and garnish with the cilantro.
