Chipotle Mushrooms
Serving size 6
Ingredients:
- 4 tablespoons Extravagonzo Red Chili Culinary Oil
- 1 medium onion, finely diced
- 4 Catch a Fire Cajun Garlic cloves, finely minced
- 4 cups button mushrooms, woody stem removed
- 2 chipotle chilies in adobo sauce, finely chopped with 1 tablespoon of sauce
- Pinch of kosher salt
- 1/4 cup fresh cilantro, chopped
Directions:
- In a large skillet, heat the Extravagonzo Red Chili Culinary Oil over medium heat. Add the onions and cook for 3 minutes.
- Add the mushrooms, Catch a Fire Cajun Garlic and chipotles. Stir to coat.
- Season with the salt, and continue to cook while stirring occasionally for approximately 7 minutes or until mushrooms have reached the desired tenderness.
- Remove from heat and garnish with the cilantro.
