Chopped Taco Salad

Ingredients:

  • 2 hearts of romaine, chopped
  • 8 ounces shredded cheese, Mexican blend
  • ½ cup E&V Key Lime Tangerine Marinade & Dressing
  • ½ pound lean ground beef, or ground turkey
  • 15 ounce black beans, rinsed and drained
  • 15 ounce corn, fresh or frozen
  • ½ cup sliced black olives
  • 2 medium tomatoes, chopped
  • 2 avocados, chopped
  • 3.5 ounces tortilla strips
  • Sour cream 

 

Instructions:

Toss all ingredients together in a large bowl except for tortilla chips and sour cream. Serve family style with tortilla strips and sour cream in separate bowls for topping.

Serves 6
