Goat Cheese Mashed Potatoes
Ingredients:
- 2 pounds russet potatoes, scrubbed
- 4 ounces goat cheese
- 3 tablespoons Earth & Vine Chipotle Honey Lime Mustard
- 4 tablespoons unsalted butter
- 1/2 cup buttermilk
- 1 teaspoon salt or to taste
Instructions:
Peel and cut potatoes into chunks. Bring a large pot of salted water to a simmer and add potatoes, increase heat to high and boil until fork tender. Drain potatoes and add goat cheese, E&V Chipotle Honey Lime Mustard and butter, mash until well incorporated, stir in buttermilk and salt to taste. Serves 6
