Herb Crusted Swordfish- Mahi Mahi or Tilapia
Ingredients:
- 1 lb. Swordfish filet, cubed
- 1/4 cup King Neptunes Fish Seasoning
- 1/2 cup breadcrumbs
- 2 eggs, beaten
- 2 cups Sugar Snap Peas
- 1 cup Red Pepper slices
- 1 cup Carrots, shredded
- 1/2 cup oil
Instructions:
Heat oil in stove top saute’ pan. Mix breadcrumbs and Fish Seasoning and set aside. Coat Swordfish in egg and then in the breadcrumb mixture. Cook in pan turning once until swordfish is done. Remove and place on platter. Meanwhile, saute’ vegetables in other 1/4 cup of oil sprinkled with 2 tblsp. of the King Neptune Fish Seasoning. Place on platter next to swordfish.
Amazing dish, plenty for 4.
