Hot Honey Chicken and Waffles

Ingredients:
Chicken:
  • 1 lb. chicken tenders or 2 chicken breasts, cut into strips
  • ¾ cup flour (either all-purpose or self-rising)
  • ¼ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 cups panko bread crumbs
  • 2 eggs
  • 2 tablespoons water
Hot Honey Sauce:
Waffles:
  • 2 egg yolks
  • 2 cups milk
  • 2 cups self-rising flour
  • ⅓ cup oil
  • 2 egg whites, stiffly beaten
Instructions:
Chicken:
  1. Rinse chicken and pat dry with paper towels.
  2. Combine flour, onion powder and garlic powder in a shallow dish. In a second shallow dish, whisk together the eggs and water. Place Panko bread crumbs in a third shallow dish.
  3. Dredge each piece of chicken in the flour mixture, shaking off the excess. Next, dip the chicken into the egg mixture, and then roll in the Panko crumbs. Set aside.
  4. In a heavy skillet, add about ½ inch of oil and heat over medium heat. Fry chicken tenders about 3-4 minutes on each side or until done and golden. Drain well on paper towels. (Heat oven to 200 degrees and keep chicken warm until waffles are cooked.)
Hot Honey Sauce:
  1. Combine all ingredients in a small saucepan over medium heat. Bring to a boil and immediately reduce heat to low. Keep warm until ready to serve.
Waffles:
  1. Preheat waffle maker, first coating irons with baking spray.
  2. Beat egg whites until stiff; set aside
  3. Combine all other ingredients in a large bowl and mix at low speed until moistened. Increase speed to medium and mix until smooth. Gently fold in egg whites.
  4. Cook batter on hot irons, using about ½ cup per waffle (or the recommended amount for your waffle iron) until golden, approximately 3-4 minutes.
  5. Serve waffles topped with 2-3 fried chicken tenders and drizzled with hot honey sauce
