Jerk Chicken and Pork with Rice
This recipe provided by the kitchens of Peppers of Key West!!
Ingredients:
- 2 (appr. 1/2 lb.) boneless, skinless chicken breasts
- 2 (appr. 1/2 lb.) pork chops
- 2 cups long grain white OR basmati rice
- 2 cups chicken stock
- 1 small can crushed pineapple – drained well
- 1/2 cup sweetened shredded coconut (find it in the baking aisle)
- 6-8 stalks (appr. 3/4 cup) green onion – thinly sliced
- 1/4 cup Tears of Fear Hot Sauce (more to taste, if desired)
Instructions:
Prepare rice according to package directions, except substitute chicken stock for water (it adds more flavor!). Brown chicken and pork in skillet, dice to about 1/2” cubes, and season with salt and pepper. Fold browned meat, pineapple, coconut, and green onion into cooked rice; stir well. Finally, add 1/4 cup Tears of Fear Hot Sauce, or more if you like it hot!
