Jalapeno Honey Waffles with Whipped Honey Butter
ingredients
For the waffles:
- 2 Tbsp ground flax seed + 6 Tbsp water
- 2½ cups almond milk
- 2 Tbsp apple cider vinegar
- ¼ cup melted butter, vegan or otherwise
- ¼ cup Heavenly Jalapeno Honey
- 1½ cups fine-grain yellow cornmeal
- ¾ cup all-purpose flour
- ¾ cup whole wheat pastry flour
- 1 Tbsp baking powder
- 1 tsp baking soda
- 1 tsp salt
For the honey butter:
- ¼ cup softened butter
- 2-3 tsp Heavenly Jalapeno Honey

For the waffles:
- Combine the flax seed and water in a small bowl; set aside. Combine the almond milk and apple cider vinegar in a measuring cup and set aside to curdle.
- Add the cornmeal, flours, and the remaining dry ingredients to a large bowl and mix well. Pour in the almond milk mix and the flax seed mixture. Add the Heavenly Jalapeno Honey, then the melted butter and quickly mix together until just combined; do not over-mix. Set aside for 5-10 minutes to thicken.
- Cook according to your waffle maker’s instructions; ours takes ⅓ cup batter for 4 minutes. They’ll likely come off the iron a bit darker than you’re used to – that’s okay, they’re not burnt (unless you actually did burn them…).
- Top with Heavenly Jalapeno Honey butter and some extra Heavenly Jalapeno Honey or maple syrup to serve!
For the honey butter:
- Combine the softened butter and the Heavenly Jalapeno Honey and beat vigorously with a whisk until fluffy. If your butter was too soft (e.g. if you put it in the microwave too long), just mix the Heavenly Jalapeno Honey with the butter and then place it in the freezer for 5-10 minutes to harden a bit. Then beat it until it is fluffy.
