Roasted Garlic Guacamole
Ingredients
- 2 medium plum tomatoes, seeded and finely chopped
- ¼ small red onion, finely chopped
- 1 clove garlic, minced
- 2 tablespoons lime juice
- 1 tablespoon Extravagonzo Roasted Garlic Culinary Oil
- ⅛ teaspoon freshly ground black pepper
- 2 ripe avocados, seeded, peeled, and coarsely mashed
Instructions
- In a medium bowl combine tomatoes, red onion, garlic, lime juice,Extravagonzo Roasted Garlic Culinary Oil, salt, and pepper
- Gently stir in avocados
- Cover the surface of the guacamole with plastic wrap
- Chill for up to 1 hour
- Serve with Enchiladas or your favorite tortilla chips.
