Rock Cod
Ingredients:
- 1+ lb Rock Cod fillets
- 2 tablespoons Extravagonzo Roasted Garlic Culinary Oil
- 2 tablespoons extra virgin olive oil
- Sea salt
- Fresh ground black pepper
- Juice from ½ lemon
Directions:
- Choose a lidded pan large enough to sauté the filets; I cut my fillets in half to fit into my #8 size cast iron pan like jigsaw puzzle pieces.
- Heat the pan to low to medium sauté temp
- Add Extravagonzo Roasted Garlic Culinary Oil and EVOO
- Bring back to temp for 20 or 30 seconds
- Lay fillets in oil (“skin” side down – no skin, but the side that HAD the skin on it)
- Season with sea salt and fresh ground black pepper to taste
- Cover with lid
- Let fish cook until done through, maybe 8 to 12 minutes (opaque white with edges curling up from bottom of pan). Try not to overcook!
- Keep an eye on them – when they curl and easily flake with a fork pull ’em off the heat and onto a plate
- Squeeze some lemon juice if you like
- Done!
