Scotch Bonnet West Indies Potatoes

Preheat the over to 400 degrees F.
Coat a baking sheet with three sprays of the cooking spray. In a large bowl, combine the egg white with the Spice Exchange Scotch Bonnet West Indies-Style Hot Sauce. Add the sliced potatoes and toss well, coating the slices. Place the slices on the baking sheet on the lowest shelf of the oven, making sure that the slices do not touch. Bake for 40 to 45 minutes, turning with a spatula every 8 minutes.
