For some reason, all the ingredients and colors of Blind in the Rind remind me of Fantasy Fest, a festival that happens every October here in Key West. Fantasy Fest is just one more reason that tourists have to flock to our island paradise and one more reason the locals have to pour a margarita! If you haven’t experienced it, you have to come down here at least once in your life.
For an entire week, the island is taken over by pet parades, balls, costume parties, and a massive parade with floats. Lately it has attracted more than 100,000 people at a time, and I can tell you that with so many people, Key West is bursting at the seams. The more the merrier, as far as we’re concerned! I could’ve sworn I saw the Conch King and Queen drinking Blind in the Rind directly from the bottle last year! But maybe that was the alcohol talking!
Anyway, use Blind Betty’s Blind in the Rind sauce on fish tacos, chicken wings, and baked white fish and bring out the best in your food. Or how about trying this as an addition to a rum runner cocktail? Mmmm!
