Matouk’s Calypso Hot Sauce brings the fiery heat of the West Indies, specifically Trinidad and Tobago. It’s chock full of scotch bonnet peppers in a sweet and spicy mustard base. Unlike other spicy mustard, Matouk’s Calypso Hot Sauce has a pepper heat and not a nasal clearing mustard heat. That’s because, obviously, the scotch bonnet peppers contribute their signature taste and fire. This is consistently a top seller here at Peppers of Key West. It’s no secret why that is- it’s a perfect product for people who love hot peppers and also love mustard. There are a few of those here at the store and it’s not uncommon to find one of us pouring some Matouk’s Calypso Hot Sauce on our sandwiches, hot dogs, bratwurst, , , deviled eggs, or any other number of foods that normally take mustard well- and some that probably aren’t so accustomed to the use of mustard.
Matouk’s is a thick sauce that needs a little bit of spreading if you’re using it on sandwich bread or rolls. After all, you do want it in every bite. That’s actually a good thing because if you’ve ever tried using hot sauce on a regular sandwich, then you know it can make the bread soggy. It might taste great, but that’s no help if it falls apart on you. With Matouk’s Calypso Hot Sauce, you won’t have that problem. This is a pretty dang spicy hot sauce too- coming in at a solid 4 out of 10 on the heat level rating scale.
