Spicy Coconut Rice

Spicy Coconut Rice

Coconut adds a wonderful flavor to this habanero flavored rice.

Ingredients:

  • 1 teaspoon Melinda’s Exxxxtra Reserve Hot Sauce (or more to taste)
  • 1 cup grated fresh coconut
  • 2 tablespoons butter or margarine
  • 1 small onion, chopped fine
  • 1 cup white rice
  • 1 cup coconut water (from the coconut–optional)
  • 1 cup chicken broth

Instructions:

  1. Saute the Melinda’s Exxxxtra Reserve Hot Sauce  and coconut in the butter in a sauce pan for a couple of minutes or until the coconut starts to brown. Add the onion and saute until the onion is soft.
  2. Stir in the rice to the mixture and continue to saute until the rice turns opaque.
  3. Combine the coconut water with the broth in another sauce pan. Bring to a boil and add the rice mixture.
  4. Bring the liquid back to a boil and immediately reduce the heat to simmer. Cover the pan and cook 20 to 25 minutes or until the liquid is absorbed and the rice is tender.
