Spicy Grilled Eggplant
Ingredients:
- 2 small eggplants, cut into 1/2-inch slices
- 1/4 cup Extravagonzo Red Chili Culinary Oil
- 2 tablespoons lime juice
- 1 tablespoon Gator Hammock Gator Sprinkles
Instructions:
1. Brush eggplant slices with Extravagonzo Red Chili Culinary Oil on both sides. Drizzle with lime juice; sprinkle with Gator Hammock Gator Sprinkles. Let stand for 5 minutes.
2. Grill eggplant, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until tender. Yield: 10 servings.
