Sweet Island Heat Lentil and Jicama Salad

Ingredients:

  • 1 pound jicama, peeled and cubed
  • 1 cup lentils
  • Water to cover
  • 6 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 3 tablespoons Spice Exchange Mango Sweet Island Heat Hot Sauce
  • 1 1/2 teaspoons minced garlic
  • 1 teaspoon minced tarragon
  • 1 cup feta cheese

Instructions:

Place the jicama in a medium mixing bowl and set aside.
Place the lentils in a sauce pan, and cover them with water. Boil the lentils until they are tender, about 18 minutes. When the lentils are done, drain them and let them cool to room temperature and mix them with the jicama..
In a bowl, whisk together the olive oil, red wine vinegar, Spice Exchange Mango Sweet Island Heat Hot Sauce , garlic, and tarragon to make a sauce. Toss with the lentils and jicama and top with the feta cheese.
