In 1928, just before the immense economic burden of the great depression and the future financial uncertainty, Joseph and Estella Wieser purchased sixty acres of land on the southern edge of Fredericksburg, Texas, which currently claims a population of 12,000 and is located 200 miles from the border of Mexico.  The Weiser’s, planted a peach orchard and the quintessential American dream began.  Nestled in the beautiful Texas Hill Country, their dedication and commitment has enabled a family business to exist for five decades! Chase Weiser joined the Fisher operation in 1969 and their name changed to Fisher & Weiser.  They quickly became the place to go for the best locally harvested preserves and sauces Texas has to offer.

There are always new ways of doing things, but Fischer & Wieser will never compromise quality. Estella Wieser’s first recipe for peach preserves is still in production.  Fischer & Weiser makes the bold statement that it is easy to stay focused on all natural, farm-fresh goodness that creates the most flavorful and authentic gourmet pantry items. That’s what you get when two feisty German families feel in their heart of hearts that if you’re honest and have a quality product, people will keep coming back for more.

Today Fischer & Wieser is located in a historic warehouse just a few blocks off Fredericksburg’s Main Street. Still in its original location, Fischer & Wieser’s historic roadside fruit stand offers as many as seventy award-winning products that have inspired culinary adventures from coast to coast and around the world.

Fischer & Weiser has won numerous awards for their sauces at the Fiery Food Challenge, The Hot Pepper Awards, the World-Wide Mustard Competition at the National Mustard Museum, and have received several Scovie Awards – prestigious awards given for exemplary sauces in the 25 billion dollar condiment industry.

Fischer & Weiser products are handcrafted with premium, fresh, and natural ingredients.  Their products are aptly named after their ingredient combinations.  Our favorite Fischer & Weiser products at Peppers of Key West are their Smokehouse Bacon Chipotle Grilling Sauce that is a phenomenal addition to pan seared scallops.  Their Sweet, Sour, Smoky Mustard Sauce is an international award winning sauce that will spike up your potato salad, deviled eggs or soft pretzels.  Last but not least, their Roasted Blueberry Chipotle Sauce.  This sauce is virtually unlimited in its applications.  Try it on warm brie, a bowl of cream cheese, or absolutely amazing on cheese cake with a chocolate gram cracker crust!
