Tomato Tart
Ingredients:
- 1 puff pastry sheet
- 2 tablespoons E&V Tangerine Habanero Mustard
- 3 medium sized tomatoes
- 1/2 cup grated Parmesan cheese
- 1/2 tablespoon fresh chopped herbs (tarragon, marjoram or basil)
- 1 egg, lightly beaten
Instructions:
Thaw puff pastry according to package direction. Preheat oven to 400 degrees.
Lightly flour a work place and rolling pin, roll out pastry sheet to 12″ x 10″. Slice tomatoes 1/4″ thick, yielding six slices per tomato. Evenly spread E&V Tangerine Habanero Mustard over puff pastry sheet leaving 1/2″ around edges. Layer tomato slices and sprinkle with Parmesan cheese. Brush edges with egg wash. Bake at 400 degrees for 20 minutes or until golden brown around edges. Remove from oven and sprinkle with fresh herbs. Cut into 6 squares and serve warm.
